#LentilSoup is definitely one of my go-to meals, especially once it starts getting chilly (sniff sniff). The recipe always changes slightly since I end up adding whatever veggies I have in the fridge, but the base is the same. Theo is eating everything now, so I am all about #BulkCooking and preparing #TwoInOne. Why not?! Equally healthy and so much easier! Just make sure to add condiments AFTER you separate your babies portion of the food!
#Ours: Bring 4 cups of low sodium vegetable or beef broth and 2 cups of water to boil. Chop 1 small onion, 3 stalks of #bokchoy, and 3 large #carrots. Add 1 cup of lentils to the pot and bring to a boil. Once boiling, lower to medium and add veggies and ½ cup of tomato puree. Cook for 35-40 minutes. Condiments: turmeric, S&P to taste, and/or olive oil.
#His: We are playing around with #textures, so I intentionally left the soup a little chunky. Avoid using too much liquid when blending.

#Salad time! Bed of greens (spinach and arugula) topped with chicken and onions*, butternut squash**, sunflower seeds (2 tbsp), shredded cheddar (1tbsp), basil-infused olive oil (delicious!!!), and cayenne pepper. * Cooked the chicken with a little tomato paste, red wine, olive oil, and water. Added onions towards the end so they were slightly crunchy. ** Cubed butternut squash into small pieces. Sautéed in water/oil and added fresh basil towards the end.

New favorite #dip = #edamame #hummus. Yum. Nutritionally very similar to #chickpea-based hummus. I would, however, choose #organic, since most #soybeans are #GMO. Or… read the ingredients and make sure it says: #nonGMO soybeans, just like the #EatWellEmbraceLife brand. I chose rice crackers as my dipping medium, but you can also use veggies, fruit, whole-grain crackers, or a spoon ;)

#Cod is one of the most Eco-friendly #fish. It also happens to be very easy to cook and perfectly flaky consistency for babies to eat. There’s very little need to add salt to a babies diet, so I just cooked the cod with a olive oil and herbs de Provence. About 3 minutes on each side. I let it cool down before I shred it.

Today my little boy is 7 months old! One of the things I love most about this age is the food introduction, #exploration. Our pediatric team (#TribecaPediatrics) is awesome! They really harp on the consistency of food (yogurt-like) at this time, but strongly suggest an array of flavors (highlighting savory instead of sweet).

I have officially become an #oyster person. I feel part of a cool club! Oysters are one of the most nutritious foods per calorie. They are an excellent source of #zinc, #vitaminD, #vitaminB12, #protein (1 gram per oyster) and #healthyfats—specifically omega-3 fatty acids. A half dozen is about 50 calories (very #lowcalorie). Happy to be home! Missed #homemade #frenchtoast. I usually soak the bread for a long time in a mix of #eggs, #almondmilk, and #spices (this time it was #cloves, #cinnamon and a grinder from #traderjoes that has sugar, chocolate, and coffee). I opt for less bread and more egg mix. Then the trick is to use more whole #fruit instead of so much sweetener. Even though Agave, 100% pure maple syrup, or honey are #naturalsweeteners they still have tons of sugar/calories. I also sprinkled the French toast with #sprouted grains and seeds. #Breakfast4Lunch! To cook: sauté #butternutsquash in about 1 tbsp of olive oil for 4min or so. Cut it up really tiny so that it cooks faster. Add 1 small tomato and sauté for another minute. Crack in an extra large #egg and 1 slice of cheese. In the meantime heat up a 4" whole wheat pita. S&P to taste. Tried out @BlueApron for the first time! #BlueApron provides a very
unique service. They deliver pre-portioned ingredients for 3 complete, balanced meals every week. They do the shopping and you do the cooking! I would totally recommend it for those peeps who find it hard to find the time to go #foodshopping or are maybe a little scared to get into the kitchen or simply are stuck in a rut with the same cooking repertoire. Every meal takes about 30-40 minutes including prep time
and are about 500-600 calories per serving (even though you can almost always tweak the amount to get more out of it). We made:
- #Steak and roasted potatoes with sautéed long beans and tomato
- #Mexican-style chicken #tortas with tomato, avocado and English cucumber salad
